Cannabis-Infused Strawberry Jam

Strawberry jam is one of the most versatile ingredients out there, perfect for turning a humdrum peanut butter sandwich into a stellar PBJ, for taking crepes and pancakes into true comfort food territory, and for filling your favourite holiday desserts with flare.

Naturally, adding cannabis transforms this extra-special ingredient into something extra extra. We highly recommend bringing a (clearly labelled) jar to the cottage or family holiday celebrations – just be sure to store it well away from kids!

Ingredients

1/2 cup sugar

1/2 cup cannabis-infused honey (or use 1 cup honey and omit the sugar)

1 lemon, zested and juiced

1 pint fresh strawberries, hulled and halved

Method

Combine the sugar, honey, lemon zest, and lemon juice in a small saucepan and cook over very low heat for 10 minutes, until the sugar and honey are dissolved.

Add the strawberries and continue to cook over very low heat for 20 minutes, until the strawberries release some of their juices and the mixture boils slowly. Cook until a small amount of the juice gels on a very cold plate. (Keep one in the freezer for testing).

Pour the mixture carefully into canning jars and keep refrigerated.
